Fall Apple Pecan Salad with Lakewood Organic Lemon Dressing

Ingredients

  • 6 cups arugula, rinsed and dried
  • 2 Granny Smith apples, cored, halved, and sliced thin
  • 2 Gala apples, cored, halved, and sliced thin
  • 2 thin red onion slices
  • ΒΌ cup pecan halves
  • 1 tablespoon maple syrup
  • 2 radishes, sliced thin

Lakewood Organic Lemon Dressing

  • 1 cup plain yogurt
  • 1 tablespoon extra virgin olive oil
  • Β½ cup Lakewood Organic Lemon Juice
  • Β½ tsp turmeric
  • 1 tablespoon honey
  • 1 tablespoon spicy mustard
  • Pinch garlic powder
  • Pinch red pepper

Instructions

  1. Prepare all ingredients. Brush sliced apples with Lakewood Organic Lemon Juice to keep them white.
  2. Toss pecans with maple syrup and toast in a cast-iron skillet over medium heat until lightly candied. Remove from heat.
  3. Whisk all Lemon Dressing ingredients in a medium bowl. Pour into a mason jar or dressing pitcher. (Double the recipe to store extra.)
