Fall Apple Pecan Salad with Lemon Dressing

Ingredients
- 6 cups arugula, rinsed and dried
- 2 Granny Smith apples, cored, halved, and sliced thin
- 2 Gala apples, cored, halved, and sliced thin
- 2 thin red onion slices
- ΒΌ cup pecan halves
- 1 tablespoon maple syrup
- 2 radishes, sliced thin
Lakewood Organic Lemon Dressing
- 1 cup plain yogurt
- 1 tablespoon extra virgin olive oil
- Β½ cup Lakewood Organic Lemon Juice
- Β½ tsp turmeric
- 1 tablespoon honey
- 1 tablespoon spicy mustard
- Pinch garlic powder
- Pinch red pepper
Instructions
- Prepare all ingredients. Brush sliced apples with Lakewood Organic Lemon Juice to keep them white.
- Toss pecans with maple syrup and toast in a cast-iron skillet over medium heat until lightly candied. Remove from heat.
- Whisk all Lemon Dressing ingredients in a medium bowl. Pour into a mason jar or dressing pitcher. (Double the recipe to store extra.)
